Since my brother can’t eat sugar and I really wanted something sweet but also guilt free. So I went on Pinterest and started searching for recipes for desserts without sugar. I came across this weird blondie recipe, where they use chickpeas. But they also don’t use dairy or flower which was perfect since my sister can’t eat dairy and my grandmother can’t eat gluten. If you didn’t notice our family basically can’t eat anything except for me (lucky me). If this recipe turn out good then I could make it again for them.
What you need;
- 8 pitted dates
- 1 can chickpeas
- 1 egg
- 1/3 cup peanut butter (I used the one with only peanuts and of course no sugar)
- 1/4 tsp sea salt
- 1/4 tsp baking soda
- 1 tsp vanilla
- 1/4 cup chocolate chips (I just cut up some sugar free dark chocolate)
- You just need to blend everything but the chocolate together. Easy right?
- Then mix in the chocolate and but in a greased baking dish and bake for 28-30 minutes on 175C or 350F.
I did have a hard time mixing the chickpeas and the dates, I formed a big clump which was hard to mix. I used a mixer instead of a food processor because that’s what I had. So to make it easier I mixed it in small batches and added a splash of water to make it smoother. After adding the egg it blends much easier. I baked it for 28 minutes and then let it cool for an hour. In the recipe they say it can look a bit under cooked after you take it out of the oven and it did but it firms up when it cools down.
And now the taste test! … I thought it was good, It’s not a regular blondie but I expected that, it is perfect to satisfy a sweet tooth. I would definitely make this again. My grandmother and brother loved it.
