Red curry coconut noodles

This is my all time favorite dish to make when I want a fast and easy dinner and it’s so delicious. DSC_0186.JPG

This really is so easy that you don’t really need measurements, you can use as much red curry or coconut milk as you like. I made this for four people but this 6 people can easily eat from this dish and be full but I always make more since the men in my family do eat a lot. I usually use the vegetables I have in my fridge, today that was tomatoes, zucchini en carrots but you can use whatever is in your fridge.

What do you need:

-2 cans of coconut milk
-Red curry (I used a package that was good for 4 people)
-2 teaspoons fish sauce
-2 tablespoons corn starch
-3 chicken breasts
-1 tablespoon soy sauce
-1 tablespoon sesame oil
-1 pack of Thai rice noodles
-1 zucchini
-3 carrots
-2 tomatoes
-1 union
-2 cloves of garlic
-1 teaspoon agave

1. First of you need to cut your chicken into cubes. To keep the chicken from drying out you add the cornstarch and soy sauce, let this sit until you are ready with prepping your vegetables. Wash and cut all your vegetables and put them aside.
2. Start of with pouring some oil in your wok and let that heat up, then add your chicken and if you are using carrots you can add them with the chicken because they need a little bit longer to cook. After your chicken is almost cooked you can add the rest of the vegetables.
3. Then we make the sauce, pour the fish sauce and sesame oil in and then add the red curry. Stir until it’s combined with the vegetables and chicken then add the coconut milk and the agave to taste. I added some paprika powder and Chinese five spice.
4. Then all there is left to do is to cook the noodles and add them to the curry. Garnish with some sesame seeds and dinner is served.

I love this dish because it’s so easy to make since you can use any vegetable you have left in your fridge. I love adding cabbage or soy sprouts if I have them, I think pineapple would be great in this too! If you don’t like spicy food you can look for a red curry that’s not spicy, I usually use a mild red curry since I don’t really like spicy food.
