Bacon and Beer Mac ‘n Cheese

I don’t really like macaroni and cheese – what? yes I know – BUT I did enjoy this very much. It’s cheesy and so flavorful. I had seen this a couple times on Pinterest but I always scrolled by because I didn’t think it would be good and boy was I wrong! I made sure I bought a tasty beer, I got an organic beer, and 2 delicious cheeses.

Bacon and Beer Mac ‘N Cheese
2 packets of bacon strips (±350g)
4 tablespoons butter
3 tablespoons all-purpose flour
1 clove garlic, minced
1 spring fresh thyme
1 teaspoon mustard powder
2 cups milk (500 ml)
3/4 cup stout beer (175 ml)
1 cup gouda cheese (100g)
1 cup sharp cheddar cheese (100g)
8 oz macaroni pasta (±220g)
Extra cheese for on top

  1. Preheat the oven to 175C or 350F and bring  large pot of water to a boil.
  2. In a medium saucepan, heat the butter with the flour. Whisking until bubbly, cook for 2 minutes. Add the garlic and thyme and cook another minute. Slowly whisk in the milk and beer,  stirring constantly let it cook for a couple minutes. Reduce the heat and add both the cheeses, mustard powder and seasoning.  Stir in the bacon.
  3. Cook the macaroni, once cooked add it to the cheese sauce. Transfer it all to a baking dish, add the extra cheese on top and let it bake in the oven for 20 minutes until bubble. Enjoy!
